Bake Blueberry Muffins just like Poppy and Mummy
What you need:
two jugs, mixing bowl, wooden spoon, muffin cases, 2 x 12 hole muffin / cupcake trays.
Oven 180℃ / 350℉
30g / 1oz butter, melted
180ml / ¾ cup maple syrup or honey
120ml / ½ cup milk120ml / ½ cup rapeseed oil
300g / 3 cups plain flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
50g / ½ cup ground almonds
1 apple, grated
2 bananas, mashed
two large handfuls / cups blueberries
How to make:
Mix together the melted butter and maple syrup in a jug.
Mix the milk, oil and eggs together in the other jug.
Put all of the other ingredients into the big bowl and mix together. Add the milky mixture and mix until it's just combined (don't over mix). Add the buttery mixture and stir until just mixed through. It should look a bit gooey and lumpy which is just what you need.
Put the cake cases into the tins and scoop a big dollop of mixture into each case. (I use an ice-cream scoop for this bit.) Bake for 25 minutes (or until they are a nice light brown colour). Cool and eat!
Top tip - these are great for freezing if you don't eat them all at once, and delicious for breakfast! Yum yum!
